Classic Chocolate Truffles


Inspiration: High on cacao, high on life. These are quick and easy to make. I love storing them in the freezer, for a little after dinner treat.

Cook to: Brutal Hearts, Bedouin Soundclash 

Makes: 8 truffles


1/4 cup cocoa butter, melted on stove 

1/4 cup maple syrup

9 T raw cacao powder + 2 T for garnish

Sprinkle sea salt

Goji berries, optional for garnish


In a small pot, warm cocoa butter, stirring continuously. Once melted, transfer to small bowl. Now you'll have to be a quick little bunny, because cocoa butter solidifies at room temperature. We want to work with it while liquefied. 

Add maple syrup, salt, and stir. One tablespoon at a time, add in cacao powder and continue mixing. 

Keep an eye on the consistency. It's perfect once firmed, yet easily moulded with your hands. Using these hands I speak of, roll 8 mini balls. Mess ensues.

Sprinkle extra cacao on a small plate and gently roll truffles. For an extra touch, blend goji berries, which look like beautiful rubies, to decorate. Share with someone special.
