Gourmet Filled Dates



Inspiration: A staple in the plant based diet, these are just a little extra special. FYI: the candied ginger was my favourite!

For: 4


12 medjool dates, pitted

1/2 cup ginger root

1/2 cup maple syrup + extra for rolling dates

2 T raw almond butter 

1/2 cup pistachios, crushed

1/2 cup unsweetened shredded coconut

4 walnuts


Gently open dates to remove pits, but only pull them apart halfway, so the bottom remains intact.

Slice ginger as thin as you can. Place in a pan with maple syrup and a touch of water. Simmer on low heat until liquid is dissolved, approximately 15 minutes. Peel off pan, and set aside to harden in fridge.

Fill your first four dates with 1/2 T almond butter each. Close the gap, roll in maple syrup, and roll again in shredded coconut.

Fill the next four dates with crushed pistachio. Roll in maple syrup, and roll again in crushed pistachio. 

Best for last: fill the remaining dates with candied ginger. Top with your prettiest pieces of ginger and walnut.
