Mango Pad Thai
Inspiration: A raw take on Thai. Noodle craving satisfied.
Cook to to: In Bloom, Sturgill Simpson
1 large avocado, peeled
1 mango, peeled and scored
Sprinkle cayenne pepper
2 zucchinis, spiralised
1 green onion, sliced
1/2 cup cilantro, chopped
1/2 cup raw cashews, chopped
Blend first three ingredients to make sauce. Add a small amount of filtered water as needed.
Create noodles from your zucchini using a spiraliser. Thin noodles work well for this recipe.
Combine remaining ingredients in bowl. Stir in sauce and mix well. Top with cilantro sprig, and crushed cashews.
