Bohemian Breakfast Salad


Inspiration: I first made this salad for a Christmas brunch with some gorgeous girls. It complemented the sweeter dishes perfectly, and is a great option for a savoury, healthy, and beautiful breakfast.

For: 4


2 T raw tahini

2 T fresh orange juice 

1/4 cup fresh lemon juice

1 T white wine vinegar

2 Medjool dates

Sprinkle black pepper

1/2 head dinosaur kale and red kale, each, roughly chopped

2 ripe avocados, sliced

1 cup cherry tomatoes, sliced 

1 navel orange, peeled and chopped

1 blood orange, peeled and chopped

1 watermelon radish, peeled and thinly sliced

1/2 small red onion, thinly sliced 


Blend first 6 ingredients to make dressing. Add filtered water as needed. Set aside. 

Combine remaining ingredients in mixing bowl, first setting one avocado aside. Toss salad with dressing. 

Two options now, equally tasty. Option 1: Avocado rose. My best friend's boyfriend created this gorgeous rose, complete with a tutorial in his sweet Irish accent. It's easier than it looks, but definitely best shown rather than told. There are many helpful tutorials on youtube, none as cute as Fergus' though! Option 2: Thinly slice your avocado and fan it atop your salad. Also beautiful.
